Around 2-1/2 to 3 PSI.

7psi is too high (on webers) (stock not quite sure) generally, it may push fuel past your needle and seat. An easy way to lower pressure on a stock pump is to put 2 gaskets under it.

But the real answer would be, what is the actual reason for your initial question? What is is doing?

That probably isn't fuel pressure. My advice would be to buy a couple of books that you'll have forever if you like VW's:

John Muir's Idiot Manual (AWESOME)

Haynes Official VW Workshop Manual

...and maybe even a Chilton's or others. I've got several of them and you just plain can't own a VW without at least the first two. You'll drive yourself crazy, bro. You'll learn a ton from those, and if you still have questions, they'll be much better questions based on an education. I can speak for myself here, I'd much rather try and help someone out who has a general understanding of a problem and can't find a solution, than someone who hasn't tried to check the simple stuff covered in the manuals.

I hope I don't sound harsh. I really dig helping others out. I mean that.

Buy those two books, though... AT LEAST those two.
